pasta carbonara

Jude had "family meal" at work tonight, so he only made dinner for one when he got home. He used angel hair pasta and made carbonara (one of our family favorites). He sauteed guanciale and then coated the pasta with beaten egg to finish on the stove. You have to cook carbonara just right, or you end up with scrambled eggs-and-pasta or, on the other end, a slimy mess. But Jude's is always spot-on...and you can't beat a perfect carbonara. Simple, but delicious.
