lentil and goat cheese salad

I'm not going to lie: I have never been a salad person. I just never really understood what there was to like. However, what I have learned over the years with Jude is that I am actually just really picky about what a good salad consists of. The salad below may not look like much in the picture, but I can attest to the fact that this is one delicious bowl of greens!

Jude has been finding new ways to slip greens into my meals for the past year and half (basically since we found out I was pregnant last November) and this is a salad he goes back to a lot because I love it so much.

He cooked up some green lentils this morning and then dressed them with walnut oil, sherry vinegar, olive oil, and dijon mustard. He left them in a tupperware container for me with a bunch of greens (herbs mixed in is key to give the greens some depth), goat cheese, and a hard-boiled egg. I tossed it with my current favorite store-bought salad dressing (Brianna's Home Style Dijon Honey Mustard) and--voila!--a delicious lunch!


Sidenote: I have been cutting back on sweets and trying to pack in a lot of good food for Ruby lately. As part of a "fitness challenge" at work, I have now lost eight pounds in the past month. It's lunches like these that are helping me finally kick this baby weight!
